What to Look for When Hiring a Salesperson

I was curious about what you all look for when you are hiring your next salesperson. Do you like to take a chance on people who have not necessarily done sales but have a lot of customer service experience? What are your thoughts on hiring someone with 20 years of experience. Can they still be coachable?

In my experience, great salespeople (no matter how experienced) are always proactive, consultative and follow a methodology/process. 

Customer service can align well with this if it has been focussing on understanding and delivering value, but the biggest challenge will be transitioning that approach into something outbound that can generate cash.
