Laptop dock converts it into a desktop, but can still be disconnected easily for travel. Best of both worlds for 99% of people.
IF you for some reason need a ton of horsepower in your machine in sales (for why I would not know), desktop or accessing an offsite VM is the only way you're going to get there.

As long as I have a larger screen and mouse to use I'm golden.

I'm a big fan of the Microsoft Sculpt line. I am pretty much guaranteed to develop carpal tunnel at some point due to previous lines of work I've done and that mouse really works well for my wrist/hand. I have virtually no pain whereas your run of the mill mouse would have my wrist flaring up before the day was over.

They are awesome, you can basically control everything on the mouse, the 4-way scroll is awesome too and tabbing through windows with a button on the mouse makes work efficient.

I'll always prefer a laptop simply due to mobility. But I'll usually have at least 1 monitor hooked up to it for dual screens.

I have a docking station with 2 additional monitors at work, but I only really use 2. As long they're a good size, it don't matter to me!

I can dock my MacBook and suddenly I have a desktop with a keyboard, mouse, second monitor, etc, and just as quickly walk away and work somewhere else. Why tie yourself to a desk?

Depends on what I'm doing... spreadsheets and presentations, desktop ALL day. (I have a dock for my laptop, it's fancy, hooks up to keyboard mouse, monitors) that's my version of desktop.

Docking your laptop does not make it a desktop PC. Desktops PC stand out because of the ease of upgrade, good luck updating the mobo of your docked laptop.
