Usually I pound coffee till noon then make a chicken nugget salad (I cut up chicken nuggets I cook in the oven put them over a bed of lettuce cover in Russian dressing) and devour it. (Also drink a lot of water in the mornings so I don't get jittery from the coffee)

I always try to keep it light at lunch, whether that means a soup or some sort of salad. I find that keeping it small prevents me from getting in that food coma / lethargic state that can be common after lunch.

I've also been consuming a few cups of matcha throughout the day. My manager recently introduced me to it, it's not for everyone but its definitely worth giving it a shot if you're looking for an extra boost without the jittery side effects of coffee

Agree with most of the comments here - my go to is a salad with some sort of protein. I used to eat heavier meetings for lunch, but would always have to chug coffee to snap out of the food coma. I typically add in some extra good carbs as a snack around 3pm just so my blood sugar doesn't crater though... done that before as well, not fun. Those headaches suck.
