Holding off an Offer Letter?

looking for some input here. I have an offer letter from an logo who are pushing hard for me to signed and onboard asap. 
I'm have second inverviews at 2 other logo's who is Esther work for and would like to see how the plan out but its a slow process. 
any topics on how to either push things along with the preferred logo's or how to keep the offer at bay?
