I grew up mostly with eastern nc style vinegar and pepper flakes but have switched to more of a western nc /hybrid style.
Here's a base recipe (credit to MeatHead) I use for sauce which can be used for butts and even on chicken on the grill:
1 cup distilled white vinegar
1/4 cup ketchup
3 tablespoons light brown sugar
1 teaspoon hot sauce (like to use sriracha or tp, or both...sometimes a mix of a few)
1 teaspoon crushed red pepper flakes
1 teaspoon freshly ground black pepper
whisk it all together and refrigerate (in a mason jar) to let the flavors blend. minimum 3 hrs, but overnight is best.
I tweak this a bit every time and sometimes add some special ingredients, but it's a solid base if you're cooking at home.
