What does your employee handbook say? Regardless your company equipment is tracked so keep that in mind.
What's the context of "work" here? You already have a job and you'll be simply working remotely while youre in Europe? If that's a yes, it's not illegal to do so for 2 weeks
Do employers typically care though? I’m planning to work in the same Western timezone

My manager wouldn't have an issue as long as I get my work done, my previous manager wouldn't have allowed it.

Yeah, this was my first thought - VPNs and then also most 2FA record the location at which you logged in.

We have it explicitly written out that we are only able to work in the US and Canada, so I would check. Definitely not a “ask for forgiveness later” situation
