Notepad lol. In all seriousness I would imagine that most do not use anything other than their own notes to transcribe in person meetings, but after a quick search, looks like Otter.AI does what you are looking for.

Best is to write it down manually if you are not making a lot and lot of visits per day. Jotting it down also shows you are in the conversation. I am not sure if the recording software but there are a lot of apps in the App Store nowadays that can record and transcribe the conversation.

Teams and Zoom can record to the cloud and that could be shared with the field sales. They sometimes have transcription built in the recording no?

I'm having a flashback to all the police procedurals that have the detectives sitting down, pulling out a recorder, and saying "mind if I record this?"

The technology exists (as Soccer notes), but I'm not convinced it wouldn't be a bit off-putting for your prospects and customers.
I've taken notes as I listen, but mostly engage in conversation. After the meeting, I sit in the car and write down everything I recall that's important or of interest, before it's forgotten. And my summary email back to the contact post-call contains the highlights and any outstanding items/next steps.
